Description:
A black sesame cake garnished with lemon confit, a yuzu mousse, with a center composed of a creamy black sesame and a flowing yuzu caramel. Covered with a ganache whipped with yuzu and sprinkled with a velvety finish of white chocolate and vegetable activated charcoal. Decorated with candied lemon zest and a black sesame cream.

This Yule log is nutty, robust and perfectly balanced with acidity. A very refreshing way to end a Christmas meal.

Conservation:
Store your log in the refrigerator until ready to serve. Keeps for 3-5 days. We strongly recommend purchasing your cake on the day it will be enjoyed. The logs can be frozen. 

To defrost the logs, we suggest taking the log out of the freezer 5-10 hours before eating and let defrost in the refrigerator.
