To celebrate Epiphany, we created our version of the galette des rois. Crispy, flaky and nutty, this pancake is unique and will leave an impression on your guests with its homemade black puff pastry, made with activated vegetable charcoal that we have incorporated into our Beurre Manié. The filling is made up of homemade black sesame frangipane and freeze-dried raspberries, and inside there is a custom handmade ceramic “bean” made by Atelier Make. Don’t forget that among the pancakes there is a pancake with 3 beans. This is part of our competition for the chance to win a private class with our chef Sonya. Good luck!

Conservation:

Keep the pancake at room temperature until ready to serve. Keeps for 2-3 days. We strongly recommend purchasing your pancake the day it will be eaten.
